Rice, Tuna, Avocado & Egg Emietté

A perfect recipe for pregnant women this summer!

Ingredients (serves 2) :

  • 1 can tuna (140g net)
  • 100g rice (basmati, semi-complete, organic)
  • 1 jar organic sweet corn kernels (340g net)
  • 1 organic avocado
  • 2 organic eggs
  • Seeds/nuts
  • Olive oil/vinaigrette

Recipe:

  1. Rinse and soak the rice for 3-4 hours, then re-rinse 1-2 times and cook.
  2. Cook the eggs for 10 minutes in boiling water to obtain hard-boiled eggs.
  3. Drain the tuna and corn and place in a salad bowl.
  4. Dice the avocado and add to the salad bowl.
  5. Once the rice is cooked, leave to cool and add to the salad.
  6. Once the eggs are cooked, peel and halve them, then place them in the bowl.
  7. Season and add seeds and nuts.

Enjoy your meal! 

A little extra : numerous studies have shown that rice contains arsenic (present in the soil in which it grows). Rinsing and soaking rice for a few hours can reduce arsenic levels in rice by up to 80%!
