Pineapple Shrimp Brochettes & Quinoa Beet Salad

A perfect recipe for pregnant women this summer!

Pineapple shrimp skewers & beet quinoa salad

Ingredients (serves 2) :

  • 1 tub of peeled organic shrimp (approx. 100g)
  • 100g pineapple chunks
  • 100g quinoa (cooked)
  • 2 beets, cooked and peeled
  • 1 lawyer
  • 1 carton of organic coconut milk
  • 1 tablespoon Colombo Mix (a blend of coriander, turmeric, caraway, fennel and bay leaves) 
  • Wooden skewers
  • Olive oil/vinaigrette

Recipe:

  1. In a bowl, combine the coconut milk and Colombo Mix. 
  2. Add the shrimp and pineapple and marinate for 1 hour in the fridge.
  3. Sear the shrimp and pineapple a la plancha or in a frying pan, then assemble on skewers.
  4. Dice the beet and avocado and place in a bowl with the cooked quinoa.
  5. Season your quinoa salad and enjoy while the skewers are still warm.
